You know when you get to that point in the Summer where you start to run out of inexpensive ways to keep the kids busy? How about a pie throwing afternoon in your backyard? (No actual pie's were harmed, just whipped cream in pie plates ;)

A beautiful, sunny day on Saturday had all of us outside finding all sorts of things to do. Sprinklers, picnic lunches, weeding and clipping of bushes and just to throw a curve -ball in there.......... guitar painting!

Hey, how are you? A couple of hours of free time have magically dropped into my lap today, so I thought I'd take a minute to say hello. Free hours are pretty rare in the Summer when school is out but thanks to invitations from friends and a baseball camp, my children are happily occupied elsewhere for a few hours. I have stitching work waiting in the studio and laundry needing to be folded but I am determined to let that all wait. Although I've been cooking and knitting and sketching to keep my creative urges under control, bigger things need to be accomplished this week and I want to start today!

It seems that most, if not all, of my creative urges are going into cooking this week. On todays's menu we have oven roasted baby potatoes:

Tarragon Cucumber Pickles 2 large cucumbers (about 1 1/2 pounds) 4 large tarragon sprigs, cut into 2-inch pieces 2 tablespoons mustard seeds 2 tablespoons whole black peppercorns 1 tablespoon coriander seeds 2 bay leaves 4 cups plain rice wine vinegar 3/4 cup sugar. 1. Slice cucumbers crosswise 1/4 inch thick, and pack into 2 quart-size jars. Divide tarragon, mustard seeds, peppercorns, coriander seeds and bay leaves between 2 double layers of cheesecloth. Tie into bundles with string. 2. In a medium saucepan, combine vinegar with sugar and bundles of pickling spices, and bring to a boil, stirring to dissolve sugar. Pour brine over cucumbers, pack bundles of pickling spices on top and let cool. Discard spices, close jars and refrigerate at least 1 hour, preferably 3. Serve cold. Yield: 2 quarts.Hey, how is your week going? Mine has been flying by, just like the rest of our Summer here in New England. Our CSA has been working out great again this year and last week we got some beautiful cucumbers in our order. My mom sent me a recipe for tarragon pickles and they came out yummy although the next time I will leave the spice packets in the jars for a little longer. I didn't get a strong tarragon taste with this batch and I would like to next time.
This recipe was in the New York Times a few weeks ago and now it is here for you to enjoy! Let me know how yours come out if you try it. It's pretty easy once you have all your ingredients gathered. Have fun!

Happy belated 4th of July to those of you in the United States! Well, the sun finally came out and has, thankfully, been shining for 4 days. The holiday weekend involved fireworks, hot dogs, beach bumming, iced coffee, s'mores, hikes in the woods......some of my favorite things. (well, not hot dogs but the kids like 'em!)
